homewrecker croque madame (a.k.a.Hot Damn Madame)

Move over Croque Madame, it’s time for the Hot Damn, Madame… the product of a naughty little rendezvous between homewrecker pimento cheese and @goodinbreaduk

She’s rich, she’s decadent, and she’s totally scandalous 🔥🔥🔥

Ingredients

For the sandwich:

  • 4 slices of Good in Bread sourdough

  • 2 slices smoked ham

  • 100g Homewrecker Pimento Cheese

  • 20g unsalted butter (plus extra for frying)

    For the Homewrecker white sauce:

  • 15g unsalted butter

  • 15g plain flour

  • 150ml whole milk

  • 50g Homewrecker Pimento Cheese

  • Salt & pepper, to taste

    Method

  1. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux. Gradually whisk in the milk until smooth and thickened. Stir in the Homewrecker Pimento Cheese until fully melted. Season to taste. Keep warm.

  2. Lightly butter one side of each sourdough slice. On the unbuttered sides of two slices, spread a generous layer of Homewrecker Pimento Cheese, then top with smoked ham. Sandwich together with the other slices, buttered sides facing out.

  3. Heat a frying pan over medium heat and cook the sandwiches for 3–4 minutes on each side, until golden and crisp with melty cheese inside.

  4. Plate each toastie, spoon over the warm Homewrecker white sauce, and pop under the grill until golden brown.

  5. In a separate pan, fry the eggs in a little butter until the whites are set but the yolks are still gloriously runny. Season with black pepper.

  6. Top with a fried egg and demolish…
